Carrot Cake Agave Muffins


12 muffins


  • ½ cup Born Sweet® Organic Golden 100% Blue Agave Sweetener
  • 2 large eggs
  • ½ cup canola oil
  • 1 ½ cups freshly grated carrots
  • ¾ cup whole-wheat flour
  • 1/2 cup all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon ginger
  • ¼ teaspoon allspice
  • ¼ teaspoon salt


Preheat oven to 350ºF. Prepare a 12-cup muffin pan with liners.

In a large bowl, combine agave, eggs and oil; beat well. Stir in carrots.

In a separate bowl, sift all dry ingredients together and fold into batter just until moistened.

Scoop mixture into prepared muffin cups.

Bake 22 to 25 minutes, until a pick inserted in the center of a muffin comes clean and centers spring back when lightly touched.


Make these muffins “extra golden” by using golden carrots instead of conventional orange carrots.
